There may be a post already on here that I missed, if so I'm sorry for the repeat.  How do I learn how to do these different types of folds I keep reading about?  I might want to practice and teach DH before she arrives.

There are lots of videos on youtube. If you're talking prefolds, I would just search the web for newspaper fold, angel wing, and the jelly roll :)

Don't forget the bikini twist!  I've had the best luck with that one keeping the poop contained...

Is there a preferred folding method for girls or is it just a trial and error kinda thing to see what works best for your own baby?

i only have boys, but my good IRL friend loved the bikini twist for her little girl. 
 
the only one i use is a modified newspaper fold.  I tri-fold the PF, place under baby, fan out back wings, bring up through legs, fan out front wings if needed, wrap back wings around the front, and snappi on.  Hope that makes sense.  the link below is kinda how I do it, except i use a correct size prefold so i don't have to fold over the length.

i thought angel wing fold was easiest but once i tried bikini fold i love it.

Is this prefolds or flats?

I use the same prefold fold for my girl as I did for my boy. I do the angel wing fold but try to roll the legs in a bit to keep poop in. 

Lots of videos on youtube.

I used to try the bikini twist but the poop liked to escape. Once I tried a prefold under fleece pants and a chunk of poop fell out onto the floor! Embarrassed I don't use that fold anymore, although it's nice and trim and if you use a good cover it will contain it.

I don't know what it's called, but I lay my PF open with baby on top then roll each side in towards the middle at a slight inward angle then fold it up over baby and wrap the back edges around to the front and pin with Boingos. I also have used the twist on my boy but I sometimes feel bad that it might be putting too much pressure on his bits.

SDJeannieZ3 - that would be a jellyroll.   It's one of my favorites, too.
