Coconut Meat Recipes??

   Does anyone have any good simple recipes for coconut meat? I already drank the coconut water but I'm not sure what to do with the meat. I think for now I'll shred this one up and fry it because it's been open a few days, but I have another that I need to use. Thanks!

	hmmm is it a hard brown coconut? the young are fleshy and soft, you can scoop out and put in the blender with smoothies, use in many reciopes. i think with the dry hard coconut shredding it is your best option.

	Coconut has one of the highest percentages of fiber among all plant foods. Add coconut meat to soups, salad. It's really good for our health. ------------------------------------------------------------------- beyond diet complaints

	Those are all great ideas! It is a hard brown coconut and hard white coconut. It was pretty difficult to get the shell off.
